My taste buds were screaming for a yummy treat so I forced myself happily today to bake this lovely, vegan quiche. I think, it is more than 6 years from now I baked my last quiche (back then still with eggs and cream). Luckily the internet helps finding recipes for all kinds of eating habits and I was thrilled to find one with vegan quiche.

Here on this picture I can only show you the last bit of it because there wasn´t much left after we were done with it. So, this is how it is made.You need these following ingredients:

For the dough:
330 g spelt flour (I used freshly grinded spelt flower from my mill)
80 g water
140g cold vegan margarine
1 tsp. salt

For the filling:
200g Pak Choi
150g tomatoes
1/2 onion
1 hot pepper
400g silk tofu
40g  starch
2 tblsp. olive oil
1 tblsp. sunflower seeds

Prepare the dough and mix all ingredients in a bowl and combine it with the hands or the kneating hook from your kitchen machine until it forms a nice dough ball.
Pack it in foil and let it stay in the fridge for 30 minutes.
Meanwhile wash and chop the Pak Choi in fine stripes, cut the washed tomatoes and the hot pepper in small pieces and slice the peeled onion in stripes. Mix it all together in one bowl.
Mash the tofu, oil and starch in a seperate bowl until it is perfectly blended. Add lots of pepper and salt until the mix tastes spicy. Pour the tofu mix over the vegetables and stir until everything is well combined. Heat the oven to 180°C. Butter a pie-pan and dust some flour over the butter. Get the dough out of the fridge, remove the foil and roll the dough into the form until the bottom and sides are covered. Pour in the vegetables-tofu-mix and spread it out so the entire pan is filled with the mix.
Sprinkle sunflower seeds on top. I also decorated the Quiche with slices of tomatoes and sprinkles of grounded pepper. Put the pan into the oven and bake it for 30-35 minutes. Careful, it will be very hot after baking time is done. Enjoy it warm with a lovely salad or cold whenever you want - it is up to you. You can also use different vegetables for the filling and don´t have to follow my ingredients list.
