It is strawberry season and since I don´t eat sugar I missed warm buns with strawberry jelly in the last couple of years. A solution was found in the internet and I couldn´t wait to try it myself. I proudly present strawberry-chia-jelly which is paleo, raw, vegan and without refined white sugar.

This is how I made it. You just need:

500g fresh, organic, dark-red strawberries & approx. 1 tblsp. chia seeds
(If you want, you can also add some vanilla, cinnamon or cardamom for the flavor).

Wash the strawberries gently and remove the green. Pour them into a mixer and mix the berries to a smooth consistency. Scoop the chia seeds in and let the jelly stand for about 10 minutes until the seeds soaked up some fluid and got bigger. Pour the berry-chia mix into glas jars and keep them in the fridge until you desperately want a jelly-bun or sandwich. I also love to stirr some of it into my vegan joghurt or just it like it is out of the jar.
(I haven´t tried how long to keep but since it is fresh without preservatives I think the jelly should be eaten in 1-2 days.) Next I´ll try it with apricots, peaches and strawberries. Mmmmmh!
