The main part is the Superfood grounded tigernut. I purchase it in the whole food shop here in Germany. The flour is sweet like almonds and I often sprinkle it on my muesli in the morning because the taste is just lovely and looks like this.

For the recipe you need no more than five ingredients and the balls are done in a flash.
100g grounded tigernuts
100g medjool dates
100ml water
1/4 tsp vanilla
cocoa
Get the pits out of the dates first. Put the dates, tigernut flour, water and vanilla into a blender and mix it until you get a smooth dough. Make balls out of the dough the size you prefer and roll the balls in cocoa. (You can also dust the balls with cocoa before serving if you like that better). Store the energy balls in the fridge (I am sure, they won´t be long in there).
